    That looks great! I'm always looking for good vegan recipes as my son and DDiL are vegan. I can do vegetarian just fine but I need recipe help for full vegan.

    I will try this soup soon. I have been making double batches and freezing extra. It is cold and soup is my favorite food.

    I made this for Christmas dinner and it went over very well. Son actually had 2nds and maybe thirds when I wasn't looking. Everyone (even my mom) liked it. Hubby who usually eats keto style liked it too and asked if maybe it could be made into a dip of some sort, I think if you omitted the vegetable broth and either blended the chickpeas or bought plain hummus and added the spices and onion etc., that would be really good although the chickpeas are too high in carbs, but for keto maybe I'll try it with cottage cheese (very similar to Indian Paneer). Also I think it would be a good sauce to cook chicken thighs which would still be keto friendly.

    Note on the Curry Paste: For Vegans, read the labels. Most are made with fish or shrimp. I did find Thai Kitchens at my local Safeway and it was vegan, was figuring I'd have to go to my local Asian market.
