Default Follow Up to Beginner Paper Piecing

I just taught a beginner paper piecing class and we did a simple Pineapple Block.

I would like to offer a next steps - something of an intermediate level - any ideas? What block would you want to learn next?

Something that includes curved piecing. I'm working on Judy Niemeyer's Sunflower Illusions, am stuck on the curved piecing.

My first (and only) pp class was with the pattern Christmas Pickle. NY Beauty blocks w/curves. Great class. It clarified the whole concept for me finally!
