I agree with you here, PP is a love it or hate it technique. I happen to be in the love it category. I prefer to PP with batiks and solids, Judy Niemeyer is my favorite, love the sharp points, just discovered the fold method with freezer paper and it's a game changer for me.

I really enjoy paper piecing. I save small scraps of fabric from all my projects specifically for use in future PP projects. But I definitely learned Not to paper piece when tired! Love the precision PP gives.

I'm in the 'I don't mind it' camp. With rare exceptions it's not my go-to technique but I don't really have issues with the technique either. Just recently finished PP'ing a king sized hunter's star quilt.

Mr.Domestic is the exact video I watched, he explains it very well. I tried a block a few weeks back just to experience it with scraps. I used my stitch in a ditch foot, using the guide on it to follow along the edge of the paper and offset my needle just a tiny bit. It worked just as good as his video, and the block I tried came out just as good as sewing it on the paper.

I really like PP. I made my SIL a queen size flying geese. Would never have attempted otherwise. It takes a little longer, but I also like the way my 9" pineapple block comes out. I have allways done the sew, then fold and tear way, but may look into the freezer paper way that some have mentioned.

The waste from paper piecing is not enough to fret over to me. I like the accuracy and perfect points of paper piecing. I switched to Stable Stuff years ago and don't remove it. I have always determined what is the most dreaded part of any thing I do and eliminate it or modify. Taking the paper off was the part I dreaded in paper piecing so I eliminated that part.

I'm a fan of freezer-paper piecing too. I like being able to use the patterns over several times and no paper trash when finished. This is the video where I learned the technique:
