Default Another Eggplant Recipe - Baba Ganoush

I love that eggplant parm dish mentioned in the other thread. It's always so hard to find good recipes for eggplant. Here's another one that I really like:

Baba Ganoush (spicy eggplant dip)

1 big eggplant, baked with skin on until very tender
1 small, dried chili
1 clove garlic
2 teaspoons sesame oil
10 almonds
juice of one lemon
small handful of parsley
S&P to taste
1 T olive oil for dressing

Slice eggplant in half and scrape the flesh away from the skin. Put the flesh into a food processor and add chili, garlic, sesame oil, almonds, lemon juice and parsley. Blend until very smooth. Add salt and pepper to taste, put in a bowl and dress with a drizzle of olive oil. Serve with chips or pitas.

We had a bumper-crop of eggplant this year. I am making Baba Ganoush this week with pita triangles. My recipe calls for Tahini (crushed sesame seed paste), but your recipe looks good too. Maybe I'll try it next. Thank you for posting it. I make my Pita triangles by spreading olive oil on them and sprinkling Italian Seasoning and Sesame Seeds on them. Then I toast them in the oven.
