Default Apple Mash Vinegar & Boiled Cider

It's the end of apple season and I've just juiced the last of the apples. I have about 8 gallons of juice. Some will be made into vinegar, some I'll boil down into syrup, some we'll drink and all of the mash left over will go into a big, jar with water and a cup of last year's cider added to make apple mash vinegar. So cheap...I would have thrown the mash away otherwise.

How are apples mashed? How to make vinegar? Curious.

Apple mash is what is left over after you juice the apples. I use a juicer which collects the pulp. You could also use an apple press. There's some skin and pulp and a few chunks of apples in it. I take the pulp, put it in a gallon jar, cover with water and about a cup of live, apple cider vinegar to it and let it set on the counter, or in the cupboard for a few months, then strain. The result is a light bodied, apple cider vinegar that is great for salad dressing and fish. If you want it stronger, it needs to set for longer to evaporate and condense.

(you can also do this with just apple peels.)

Boiled cider is just that. It is left on the stove on low, until it condenses into a syrup. Very yummy! Great on pancakes and french toast.

Reduced apple cider sounds super delish, I'm going to have to try that!

Uh...you coooouuuuuld make moonshine with it too, but that might be illegal.

It would also require a still.

I made Apple Cider Doughnut Bread this week. You boil cider until it's reduced by half, put some in the bread, poke holes and pour some over the baked bread and mix the last T with butter to brush on the loaf before you sprinkle it with sugar. It was yummy!

Oooo...yummm! Recipe please.


A tip about the apple cider vinegar made with mash...You will eventually need to remove the mash, which will float up to the top. If you don't it will start molding and getting yucky. I have left mine on for about 2-3 weeks and now I'm spooning it off the top. Next, and I'll strain the vinegar and leave it covered with a cloth in a dark place. (You can also put a paper bag over your vinegar jar to keep it in the dark. )
