Default Salads

Please share a favorite Summer salad

3 BEAN SALAD
1 can kidney beans
3 cans cut green beans
1 can yellow wax beans
1 can black beans
Drain then rinse all beans. Put in large bowl then add
1 green or red pepper cut in 1/2 “ pieces
Diced onion to taste
Make dressing by shaking following in a covered pint jar:
1/2 cup white vinegar
1/2 cup vegetable oil
1/2 cup white sugar
1/2 tsp black pepper
Pour over beans, fold everything carefully to keep vegetables from mashing.
Refrigerate overnight

Orzo salad

Cook 1/2 box of Orzo
While cooking, chop a small onion, half a green pepper, and a tomato and put them into a bowl. Add a small can of sliced black olives and half a container of low fat feta cheese.

When Orzo is done, rinse with cool water and add to bowl. Dress with 2 T lemon juice,1/4 c. olive oil, and salt and pepper to taste. I like a lot of pepper in this.

Mix and chill.

Both sound really good. Would be so great for summertime salads. Another great one. Chop a green bell pepper, chop a tomatoe, add a little chopped onion. Then mis with cottage cheese. Add salt and pepper to taste

Thank You. These all sound good and I like making different salads all summer. The price of salad dressing has gone crazy ,$8.00 a jar.

I have orzo in the pantry so will be making this !
