Make a template to lay over the quilt block edges. Keep the writing in the block. Have pieces of paper for them to practice on first.

Thank you, All. I've decided to have people sign individual blocks and I'm going to put them on the back of the quilt. The front will be a curvy log cabin. I have three months to get it done, so I should be okay. I was concerned about getting the signature blocks out to everyone who might like to sign the quilt.
