    I also slice cabbage about 1/2" slices and cook at 400 degrees for 40 minutes. With olive oil and spices. It is my family's favorite.

    My Cole slaw recipe is rather simple...
    if using more than one pre-packaged Cole slaw mix (plain not the one with the dressing included) adjust ingredients accordingly (2 bags double ingredients, 3 bags triple and so on.)

    1 bag Cole slaw mix
    3/4 cup mayo
    1/4 cup sugar
    small can pineapple tidbits (drain BUT save juice)
    1/8 cup apple cider vinegar
    1/8 cup olive oil

    Put Cole slaw mix in a bowl set aside. Mix Mayo, sugar, "half the pineapple juice" apple cider vinegar and olive oil in a bowl. Cut pineapple tidbits into three smaller pieces, add to Cole slaw mix, toss to mix in. Add dressing, blend until well coated. Cover and let set in the fridge for about an hour, taste to see if it is all blended, add more dressing or to sweeten up (just add some of the leftover juice), if you haven't drank it of course....lol

    My husband does the taste testing since I don't like Cole slaw.

    Another recipe for dressing for salad greens or cole slaw....
    1 cup mayonnaise
    1/2 cup maple syrup
    1/4 cup vinegar

    Tres yummy!

    I made a dish of cole slaw from a bag yesterday and noticed it was looking tired. So I sauteed an onion and added the rest of the bag, will have it for lunch today.
