    Instead of the parmesan polenta on Saturday night to go with the chicken I made rice in an Instant Pot and roasted mini peppers in a hot oven. Last night we had the rest of the chicken with oven roasted green beens and the parmesan polenta. Delicious again.

    I never cared for avocado but i was served a dish of chopped not too ripe avocado with olive juice poured on it. I loved it. Nothing else just the vinegar from the olive jar. That is only way I eat avocado now.

    tonight is bone in pork chops with flavorings of choice done in air fryer, some leftover rice, and got a head of Romanesco. Will break into florets and use olive oil and flavorings and roast in hot oven.https://www.allrecipes.com/article/what-is-romanesco/
    When I do broccoli this way I save the stems and freeze them and when I have a bag full make broccoli potato soup and whiz it in the blender to smooth it out. Use an onion and broth and flavorings. I'm having a tooth pulled Wednesday so going to make some of it tomorrow and have it on the ready.

    We are having left over baked ham from Easter dinner with fried potatoes and onion, cornbread and sauerkraut. Peach cobbler for dessert.

    Last night, I roasted a whole pork loin tender. Seasoned and broiled 5 minutes on each side. Done! Served with carrots with butter and cinnamon and broiled zucchini. Then, strawberry/blueberry fruit salad coated in sour cream/Splenda sauce. (1 c. SC and 1/2 c. Splenda)

    My usual single gal supper - cheerios with blueberries and almond milk. My sister was visiting over the weekend, I made lasagna and chicken tenders with rice pilaf. She eats a regular dinner at 6 PM, I like to eat my last light meal around 4. So when I visit her, we have dinner at 6. And when she visits me, we have dinner at 6. Big sisters, ya gotta love em!!

    Salisbury steak with mushroom gravy, mashed potatoes and steamed asparagus. And my downfall...Little Debbie's powdered donuts (x4) for desert.

    Mussels in wine sauce, (frozen and on sale, $3!) pasta, big salad from the garden maybe some vanilla ice cream for dessert.
