I don't know what I'm having tonight. I made Tzimmes (Jewish dish made of sweet potatoes, carrots, raisins, nuts, honey bake,) and Chicken Coconut Curry (Indian) the other night and that was a hit. The curry was mildly spicy and the tzimmes were fruity and sweet. The combo was perfect in spite of each dish being from 2 entirely different cultures.

Last night I did an easy Albondigas Soup. I used store bought meatballs (cheap...BOGOF) and various veggies in a homemade broth. The guys liked it. I sneak in those veggies any way that I can.

last night I made salmon patties from a big can of salmon and roasted potatoes and peas. I had a salmon patty for breakfast before the gym. Yum

I've never made it before, so finger's crossed. I can't let my dear son see me put the tofu in it. I'll have to be sneaky.
I'm also using the leftover broth from the other night to make a clear, mushroom soup to go with it. I have some criminis and a few shiitakes and I'm hopping that I can convince one of my guys to go out to the chanterelle patch to get some of those to add to the soup. It's raining pretty hard...I dunno.
I have a head of cabbage from the garden. Maybe I'll include a slaw.

Came across a recipe on line for chicken breasts, slice thin, mushrooms, soy sauce and honey and of course usual salt, pepper, garlic, oil, butter in a skillet. I added a squirt of Japanese BBQ sauce. Made noodles. Very easy, very good.

DH had a birthday earlier this week, but had an evening meeting, so postponed his birthday dinner. He came home that night and said he would like me to make oyster stew. While I grew up eating it, I've since developed an allergy to scallops, and the smell of oysters reminds me of scallops, which just started a couple of years ago - so I am reluctant to eat any.
So, I will make it for him and I will enjoy leftover vegetable pizza I made last night. Everyone will be happy, and it's pretty simple.
Now, what I really want, is Mexican! Will have to find a friend to go out with, DH does not care for it.

The mini-guild retreat was Friday/Saturday and I made the quiche lorraine with zucchini crust (I linked recipe on page 31). It was really good made in the right style of pan. Will put the zucchini crust in the keto savory crust thought file. I was a little suspicious of the squash we bought from the farmer's market -- it looked like a zucchini but the skin was tough. When I cut it open, it was not a zucchini! Wasn't sure if the skin was edible or bitter, not that much flesh. So had to run to the store for something I could grate.
I did use my "good" quiche dish which matches my dishes and that I have never actually used before. It came home safely
In my move stuff and as I try to establish a new relationship with things, I am trying to use the good stuff. I moved it because I wanted it as a useful item.
For today, it was supposed to be a beastly day outside with temperatures dropping and possible snow. Current forecast is slightly better, but we will be celebrating the hubby's Bday (which was Tuesday) with the Turducken I ordered for him. It has thawed in the fridge and is fully cooked, but will take about 2 hours of heating up.
@tropit I've almost given in on the food processor several times... Once we have more garden/vegetables that need dealing with, my desire will probably go up. Once we get our freezer and start buying half animals, I am more likely to get a meat grinder. Currently I have one of the old metal ones that clamps to the counter, it has been in my possession since I left Alaska in 1983 -- think my Mom bought it in the 70s?? still works like a champ! I might give into hubby thinking we should have a Kitchen Aid mix master and all (or at least a lot of) the attachments. I do have a vintage stand mixer, small size, you could just barely do a cake mix package in it, that I have honestly never used but did move with us! I could give that up and the counter/draw space for more attachments.
