    It's soup weather. And it's better as leftovers. Tonight was the last of chicken and vege soup.
    Think tomorrow I'll make beans.

    My husband made homemade consomme yesterday. It was really good! He's always experimenting in the kitchen. I married my Mother haha

    I was bored so made two loaves of French bread this morning. They will be ready to bake by supper time. Fresh bread, bacon and eggs are our supper tonight.

    I'm going for a pasta dish tonight with left over chicken, ground Italian sausage, veggies and pasta sauce. I'll make a good salad to go with it.

    I am marinating boneless chicken thighs in dijon mustard, olive oil, lemon juice, lime juice and tarragon and will make them in my new Ninja Crispi Pro air fryer gizmo. To go along with will roast some broccoli and probably peel some potatoes and mash them. The recipe is a grill recipe but, we don't have a grill. these also do well in an oven.

    I have three young grandboys staying the night with me tonight. Supper will be burgers, fries, and spaghetti. Lots of ice cream and popcorn. Probably a few cookies for good measure.

    Oh...that sounds good. I might try that tonight. I don't have a fryer, or a grill, but I could probably broil the chicken. Thanks! I think that I'll add some pumpkin soup and rice to the meal.

    What I finally made: 3 frozen chicken breasts, sauteed in olive oil, seasoning salt and lime juice. Threw in a couple of handfuls of baby spinach, chopped up some mushrooms, and threw them in there, added some jarred white sauce and cooked it all until tender. Boiled up some angel hair pasta and served the chicken and veggies over it. Easy peezy. pretty tasty too!

    Today was dairy day and we got other groceries as well.

    At the nearby butcher shop they have a lunch counter and a deli counter and we got lunch there. Hubby had his no-buns farm burger (one beef, one pork sausage patty + egg) plus bacon option. I had this week's special which was a swiss steak.

    We brought home a package of premade (but raw) italian meatballs. I have them finishing up in some hubby approved (low carb-ish) toamato sauce. At the grocery store we got a pack of marked down little yellow squash, not so much crookneck, not quite yellow zucchini but in that sort of plant. I have that boiling for a bit, about to drain, butter and serve with parm and the meatballs.

    Yum!

    Not sure if I have ever shared our dinner menu here…..but tonight for sure, I can just imagine your reactions, haha! Little GD is here for the night and her request is European weiners and pasta! ..and so Omi will be happy to oblige 😃 thank you for posting your dinners, some inspire me…when DH and I are alone, we usually eat chicken in some form, and fish, and veggies, which we love!
