    I love the fact you are roasting the pecans. So many candy makers use raw pecans but roast their Almonds. Roasting really brings out the rich flavors of fresh nuts. For everyone just starting out making candy my biggest recommendation is to use the freshest ingredients possible and buy the best you can find and afford (chocolate) Taking the time to make a wonderful confection but using old almonds/pecans or not so great chocolate is being penny wise and pound foolish.
