Default Candy recipes

Toffee; Place whole pecans on cookie sheet and put into 250 degree oven for 1/2 to 3/4 of an hour. Remove and chop a cup of the pecans for coating. Leave the rest on cookie sheet. Place 1 pound of sweet cream butter into a heavy guage pan , melt butter, add 2 cups of sugar, 2 Tablespoons of white karo, 6 Tablespoons water. Cook to 280 degrees on candy thermomiter. Pour over the whole pecans on cookie sheet. Top with 1 cup of chocolate chips and as chips melt spread over the hot mixture to coat it evenly. add chopped nuts, cover with sheet of foil and with a secon cookie sheet flip over and do the same to the sesond side. Let cool and break into pieces.I usually make two batches of this, one with white chocolate chips and one with the milk chocolate.

Sweet cream butter is marked on your butter container. Butter can be made two ways, sweet cream and sour cream. You can also buy butter that is sweet cream and salted. For Toffee it doesn't make any difference about the salt as long as it is sweet creambutter.

Always use a candy thermometer. You won't flop. If you don't have one, buy one, it's worth the investment. Until I broke over and bought one. I flopped more than not.
