My project to go is Cathedral Windows. I have been working on one for 5-6 years. It is something that has no pressure and I have used scraps for the windows, so it will be scrappy. I don't know if it will ever be finished. Maybe it will be one of those projects someone "finds" at a yard sale--Hopefully a long time into the future. lol

If you love working by hand why don't you try redwork (or embroidery). My favorite is hand applique but also love embroidery. It's so portable and easy to stop and start without losing your place.

I do enjoy a little embroidery but it wears out my small brain LOL . Piecework is simpler -- just a straight (or gently curved) line, same stitch, can daydream while at it .

I'm really enjoying hand applique right now, but I've also hand-pieced a DWR (unfinished) and a postage stamp quilt

any of Jenny Beyer's patterns are well suited for hand piecing- (since she hand pieces all of her quilts) the precision you can achieve with hand piecing makes it a great technique for many of the more difficult patterns- that are difficult to get together by machine. I love to hand piece and have done log cabin blocks, stars, many of Jenny's patterns-
also a couple of Sue Garmen's patterns/quilts are nice done by hand. any pattern can be sewn by hand.

I am hand piecing this at the moment

I just work on one star at a time with the blue around each one.

I also hand pieced the cubes in this one but finished it off by machine

This one is a paper pieced mariners star that was all hand pieced

Hand piecing can be very relaxing, I'm sure you will find something fun

I like a mix of piecing and hand applique. It makes for a nice portable project that is fun to do.
