My Mom's enchiladas have been my favorite my entire life. They are made with corn tortillas, red chili sauce, shredded cheese and onion. A plain, simple and delicious Lenten meal.

I make pizza using pineapple-mango salsa as the sauce, add slices of red/green peppers and mushrooms and cheddar cheese on top. add a salad and you have a nice meal
