    Chicken salad, pimento cheese, raw carrots, cucumber with ranch dip, fresh fruit with cream cheese dip. I used to make a sheet cake (yellow), punch holes in top with a straw, pour jello mix (any flavor) then cover with vanilla pudding, then whip cream on top, keep refrigerated, YUM!

    I saw a quick way for fixing pasta without getting a huge kettle out or large pot and it works for us. I have frozen meatballs in the sauce. When we want pasta and meatballs doesn't take long. I just get my large skillet (12") and put pasta in desired amount and cover with water, then season with salt. Bring it up to a boil and check. When it's aldente, and the sauce is done (heat the way you want, nuke, stove top) time to eat. Fresh veggie salad on side. Takes about 15 minutes.

    Had a wonderful Southwest Salad at our last quilting meeting. Great for summer. Has so many vegetables it is almost a meal by itself.

    Here's a couple of salads that's a hit with everyone I've served them to. I don't have the amounts for each ingredient, I just wing it!

    Strawberry Spinach Salad

    Baby spinach
    Cherry tomatoes
    Sliced strawberries
    Grapes
    Red (purple) onions
    Mandarin oranges
    Pecans (or walnuts)
    Feta cheese (or jalapeno cheese)
    Newman’s Balsamic Vinegar Dressing

    Taco Salad with Catalina Dressing

    Ground beef, browned (optional)
    Lettuce
    Tomatoes
    Red onions (or green onions with tops chopped up too)
    Fritos (the small size chips)
    Catalina dressing
    Shredded cheese
    Ranch style beans (drained well, or you can rinse them)
    Black olives
    Tortilla shaped bowls (optional)

    Avocado (optional)
    Jalapenos (optional)

    Slow-cooker meals are always good. You can throw just about anything, into a slow-cooker!

    I was just thinking that and noticed I normally use my slow cooker in winter but summer use would actually be better!!!

    Tonight I made salmon salad: two small cans of salmon, heated a can of whole potatoes, cooled and chopped and put with salmon. Then added chopped celery, mayo, dill weed (dried), a little hot sauce. Served it on a lettuce bed along with green peas and saltine crackers with buttah!! really pretty good and easy and cool! When I make tuna salad I add a chopped apple or some grapes to sweeten it a bit. Just easy peasy and cool for hot days which are here. I enjoy seeing what others make! Thanks for all. oh, served cut up cantalope with this too! yum!

    Yup, bring out the crock pot. I even made lasagna in it one time.

    I pretty much live on cottage cheese with cucumbers and sunflower kernels in the summer--when my tomatoes are ripe, I add them, too.

    Grilled avocado, grilled corn, grilled grape tomatoes, black beans, salt, black pepper, olive oil
    Toss all together goes well with a good french bread.
