    Link for the chicken cordon bleu casserole http://chicken cordon bleu casserole . I prefer to add the cheese to the sauce before I pour it into the casserole. Crushed Ritz crackers (no butter added) onto works very well instead of the panko bread crumbs.

    Quesidilla. With pepper jack cheese. Or saute baby spinach in fresh garlic and butter. When the spinach has wilted down, just put. Between two tortillas. If you don't have a quesidilla maker. ( love mine!) just use a griddle. Yum!

    Chicken quiche, chicken pot pie, chicken salad, ooh the possibilities. I like to cook up a bunch of chicken in my Romertoff and then freeze what I don't need for future quick meals.

    That sounds good Iclang. I'm going to have to start freezing some cooked meats to make dinner "easier".

    You could make gravy and do chicken and biscuits. If you do not have the drippings you could use a gravy mix. If you prefer rice you could put it over that.

    We use them a lot in salads. Really good. Also the fajitas sound really good

    I've taken chicken and reheated for breakfast. Diced it up, reheat then throw scrambled eggs on top. Turned it into an omelet.

    I always cook extra chicken breasts so we can have "Sausalito Sandwiches", a recipe I made up from some sandwiches we had in Sausalito. Cut a ciabatta roll in half. Butter with garlic butter. Grill or broil the bun. Put mayonnaise, roasted red pepper and sliced chicken on the bread. That's it.
