    Hubby and I made a batch of chocolate mint ice cream 25 years ago that was the best I'd ever had. We took some Mountain Man brand mint chocolates, melted them, and made ice cream with them. Holy moly! It never did freeze solid, it was just a tiny bit more firm than soft serve. But it was soooo good, as you can tell since I'm still drooling 25 years later. Between the heavy whipping cream we used and the chocolates, I think it was the high fat content that made it super creamy and soft.

    I use to make Pudding Sandwiches for the kids. It was chocolate pudding with peanut butter. Right now I can’t remember what else but I suppose a bit of milk. Mixture was spread between graham cracker squares, wrapped in foil or Saran and frozen.
