Thanks for all the great ideas! I use the empty toilet paper roll for mine.

A friend of mine uses a spool slipped onto small piece of pvc pipe and had a way to put it around her neck. Binding is wound around the spool and feeds off a little at a time.

My cat would pull the binding strip out of the basket before I was down one side of the quilt. Then he'd be up in the basket talking to me from his new perch, all proud of himself and his accomplishments.
But I'm glad it works for you!

I roll up the binding after it is ironed in half and put it in a plastic zip lock bag. I sew it on, and unroll from the bag as I go. Doesn't roll around or get dirty.

If you have a metal stand for your bath tissue, roll the binding on the paper tube and use the stand. (It can be spared from the bathroom long enough to get the quilt binding sewed on--set priorities!)

I use an empty spool of thread, wrap my binding on that and put a piece of whatever through it then hang it around my neck. Works great and never in my way!
