You could look for coloring book pages with dinasaurs (*spelling) and do applique, or maybe a sunbonnet sue. That one she would not grow out of. I know a lot of teens and adults that love Sue.

Since you want simple, I'd agree with doing a Warm Wishes pattern. It looks harder than it is. It's basically a rail fence except that the rails aren't three equal sizes -- one us larger. The alternating blocks could simply be fussy cut (or not) to show off the animals.
