I cut the test block. Then cut for about 4 at a time or a row. I do this to prevent too much pressure on hand and back doing the lot. Also you may decide to reduce the size as you go and by small cutting sessions you have a large piece of fabric for your stash not bitty cut pieces. I would leave sewing all together until I have the size I want.

I too make a test block first. Then I cut 4 blocks and sew them, add sashing (if needed) and sew them together. Don't know who I was watching, but know it was on Simply Quilts, the suggestion for big quilts was to make smaller squares, then assemble into slightly larger squares until you have the quilt in 4 quarters. Then sew the quarters together -- that way you don't have to do a lot of long seams, only one. For me, it makes the quilt more manageable to piece.

I get bored cutting everything at once, and sometimes I change my mind about what color goes where. So I usually cut enough fabric to make a couple of blocks at a time. That way I can see my finished quilt grow.

Looks like you've gotten a lot of good advise. My two cents is cut a few stars at one time then see if it's going in the direction you want. If your not concerned about color/value placement then I would cut more at one time. I do think giving yourself a break from cutting to sew for a while helps with boredom.
