I use the plastic and cut two pieces for each template. I write what it is on one piece and glue the two together with the writing inside. This way it's thicker and the marker doesn't rub off.

You can also use a small peice of tape that is rolled and stick it to the back of the templet and it won't move when cutting. I have done this and it helps me.

why do you need to make dots & punch holes for these?

That just helps you make a 1/4 seam. If you can sew 1/4 by eye then you dont need it. But it helps to maintain accuracy

So you can mark your fabric with a dot where the hole is. So when piecing by hand you know where to start and stop sewing. You can also use it as the point to pin you pieces together so they line up properly. This the way I understand it. If I'm wrong someone will correct me.
