Most things I press to the dark side and don't worry to much about it otherwise. The only seams I open are the ones on fans or dresden plates. They are easier to applique onto a background if they are open.

When I'm piecing, I have started to do the same thing because it's easier to hand quilt over an ironed open seam than through the 3 layers you get when you iron to the side.

I'm making a log cabin and have decided to press my seams open.
My last quilt, I pressed to the dark side, but, I like how it looks pressed open

There is a professional with videos on QNN that presses open. If she can than we all can.
I like Eleanor Burns patterns cause she tells you which way to press seams.
