I'd think like everything else, you can learn differently. I'd guess a steady speed would be the hardest part to learn.

Right handed use right foot when I use a pedal. Because I have restless leg syndrome I find my legs get really tired and the more stress I put on them (i.e. sewing or quilting a lot) the worse they are. About a year ago I unplugged my Janome sewing machines from the foot pedals (and now I am not sure where either pedal is- LOL) and I strictly use the start and stop button. People say you aren't as accurate, but I have not found that to be the case. I have slowed my sewing down to be more accurate and it has helped greatly with putting blocks together and has saved on my legs hurting so much, because when I sew on Saturdays in particular, we can sew from 10 a.m. to 11 p.m. with dinner breaks. If you are having surgery and can sew on your machine without having to use a foot pedal - slow the machine down and try sewing on it now without the pedal. I do it all the time and has been wonderful. Good luck with your surgery "tomanycats" and if you have any questions, do not hesitate to pm me.

Years ago, I broke my right ankle,(I am right handed) but still managed to drive my auto-transmission car, left footed. So, I guess if I can adapt to that, you could adapt to left footed sewing. I would practice now, so you have some idea how to set up your 'foot' area.

I am a true born lefty. However, knowing things are right handed my maother against all odds taught me to cut with right handed scissors- can't even use left. I sew like I drive- with the left foot. I do a lot of applique and my left hand is the dominate for fine turns while the right is occupied with controls. I am very confortable doing most things in a right handed world but there are some things that rub the wrong way. my huusband is a righty and we often run into conflict in the way we set things up etc.
