    Default Soooo Many Cucumbers!

    My DH, in his true, competitive spirit, took all of my spring cucumber starts and planted them in HIS garden. (I don't need to explain why we have two, separate gardens.) OK...he wins...whatever that's worth. Every day, he proudly slaps 5, or 6 cukes on the table and expects me to do something with them. I've made pickles, of course, which he does not eat, cucumber salad, which he kind of ate, and now I've made Grated Carrot & Cucumber Salad, which he'd better eat. I might try that cucumber bread recipe that was posted in another thread.

    Does anyone have any more cucumber recipes?

    Make tzatziki! Yum. Cucumbers are just so good just eaten as they are but delicious in virtually any salad. And how about cucumber sandwiches? There are lots of relishes you can also make, depending on the type of taste you want. I like cowboy candy that has cucumber added to cut some of the hot.
    If all else fails, slice cucumbers, get comfortable and lay the cool cucumber slices on your eyes, then take a nap.

    Give them to your neighbours, friends, family ....

    I know your predicament. Cucumbers are like radishes, there's only so many ways to work with them. I enjoy them as cucumber sandwiches on white bread with onion & chive flavored cream cheese.

    I love cucumber sandwiches!! I agree, donate to the food shelf, or leave a box out by your mailbox with a "free" sign.

    Oh tzatziki with gyros is awesome!! If you want a recipe, my family inhales this one, there's never leftovers.

    My favorite cucumber sammich is bagel, cream cheese, roast beef, and sliced cukes. I also like a snack of them sliced into a blend of vinegar and ice water with a sprinkle of salt.

    So....he refused to eat the Grated Carrot & Cucumber Salad. I'm giving the rest to the food bank and my chickens.

    Remember - cucumbers are a natural diuretic and they have other health benefits.

    Our dau puts sliced cucumbers in her water. Refreshing.
    I plant English cucumbers on a trellis. My favorite kind and it’s all I plant but seed is hard to find. My local greenhouse actually had started plants this year !!

    For eating, I make Swedish cucumbers. I remove “most” of the peel and slice them in a large glass jar. Jar has rubber seal and a wire clasp but any jar will do. I also slice a fresh onion thin and alternate a few onion slices with the cucumbers. Boil vinegar (white or apple cider) with white sugar. No water. For my large jar (it holds 3-4 cucumbers) I use 3/4 cup vinegar and same of sugar. Boil gently for 1 minute to dissolve sugar. Add black pepper & salt to taste. Pour warm brine over cukes. It will look skimpy but cukes will make water and cucumbers & onions will submerge overnight in refrigerator.

    edit - do not reuse brine because it’s too diluted now.

    I do pretty much what Tranum does, but add mustard and celery seed and sometimes some turmeric for quick refrigerator bread and butter pickles. Our favourite. But there is also Ice Cream pail pickles. I have a jar of them (just halved the quantities) in the fridge right now. Just about ready to test!
