    I bought some lentils after having some really good Lentil soup at a restaurant a couple months ago. I need a good recipe to try. I believe that the soup that I had was a vegetarian one but that is not what it has to be.

    Anyone????

    This is the one I make all the time.

    Lentil Soup

    1 1 lb bag lentils washed
    1 cup chopped each of the following
    carrots
    onion
    celery
    green pepper
    4 cups water
    1 tsp salt
    1/4 tsp black pepper
    1 tsp dried parsley (or 1 tbsp fresh if you have it)
    Put eveything in a large pot, bring to boil. reduce heat to me/low simmer about 1 1/2- hours. Add water if it becomes to thick.
    After putting the soup in a bowl I top it with cheese and put it under the broiler to melt the cheese. YUMMMMMOOOOOOOOO!!!!!!!!!!!!!

    I have never done this as I want it meatless but you could add chopped hot dogs to the soup the last 20 minutes of cooking.

    Oh I forgot to say lentils have an added bonus besides being filling and you digest them slow so it take you longer to feel hungry they are natural in estrogen. For about a year when I should have been taking hormone replace but didn't want to I would eat a cup of lentil soup every afternoon as a snack.

    Thanks True, I will have to try this. I need something that will keep me from getting hungry real soon.

    I can bet this one is good but haven't tried it.

    Barbecued Lentils

    2 c. barbecue sauce
    3-1/2 c. water
    1 lb. dry lentils
    1 pkg. vegan hot dogs, sliced

    1) Combine all ingredients in slow cooker.
    2) Cover. Cook on low 6-8 hrs.

    Makes 8 servings.

    Have another one for you that calls for kielbasa and ham slivers which will probably be excellent. Want that one? It's lengthy.

    Am going thru all the cookbooks for you. It's not in Todd Wilbur's Top Secret Restaurant recipe book, but found one in Emeril LaGasse's cookbook plus the one in the VIP Cookbook from VA. I'll post that one now. Emeril's is a ragout but sure that you would like that too. It sounds great. Here's the one from VIP:

    Lentil Soup

    Serves: 6-8
    Prep: 20 min.


    1 pound dried lentils 2 soup cans water
    1 tsp. olive oil 1 tsp. white pepper
    1 large carrot 12 whole cloves
    1 large stalk celery 1 bay leaf
    1 med. onion juice of 1/2 lemon
    1 med. potato ham slivers
    1 14-1/2 oz. can chicken broth kielbasa

    Cover lentils with water, bring to boil and pour off water. Do this 3 times. Put olive oil in large pot. Dice carrot, celery, onion and potato very fine and saute on low heat 15-20 min. (I place a sheet of waxed paper over vegetables to keep flavor in). Add lentils, chicken broth and 2 cans water. Add pepper, cloves and bay leaf. Bring to boil and simmer 1 hour. Add lemon juice. Ham slivers or sliced kielbasa can be added to make a heartier soup.

    Here's Emeril's (Favorite recipes from his restaurants)

    Sun Dried Tomato and Lentil Ragout

    1) Heat the oil in a med. saucepan over med-high heat. Add the onions, carrots, and celery and cook, stirring, until soft, about 3 min. Add the garlic and cook, stirring, for 1 min. Add the lentils, veg. stock, salt and pepper and bring to a boil. Reduce the heat to low and simmer, uncovered, until the lentils are just tender, about 18 min. Remove from heat.

    2) Add the tomatoes, stir well, and let stand for 10 min. Stir in the parsley. Serve warm. Makes 4 servings.

    Ingredients:

    3 Tb. olive oil
    1/2 c. chopped yellow onions
    1/2 c. chopped carrots
    1/2 c. chopped celery
    1 tsp. minced garlic
    1/2 pound brown lentils, rinsed and picked over
    3-1/2 c. vegetable stock
    1/2 tsp. salt
    1/4 tsp. freshly gr. black pepper
    1/4 c. oil-packed sun-dried tomatoes, drained and coarsely chopped
    1/2 c. chopped fresh parsley

    Modified from Mrs. Beeton's Book of Household Management:

    Winter Pea Soup (Yellow)
    1 lb split peas (yellow)
    1 ham steak with the bone in it
    1 onion
    2 carrots
    couple stalks of celery

    soak the peas overnight. Rinse the them the next day & put them into a crockpot. Cut up the onion, carrots, and celery; add them to the crockpot. Cube the ham steak & add to the crockpot.

    Cook on low heat until the peas fall apart. Stir to mix up the soup.

    Serve with garlic bread. Should serve about 12 people.
