Mandarin Orange Cake
Want something sweet but don’t want to make a huge cake that gets dried up before you finish it? Here is a small cake that fits just one 8 inch round cake pan and has it's own topping (not frosting). Recipe from my MIL. Serves 3.

In Medium mixing bowl:
1 - 11 oz can Mandarin oranges WITH juice
1 egg
1 tsp vanilla
Beat well with mixer and set aside.

In another bowl:
1 cup sugar
1 cup flour
1 tsp soda
Pinch of salt
Mix dry ingredients well, then blend into wet ingredients above.
Pour into 8 inch round cake pan at 350 degrees until toothpick comes out clean (approx 40 minutes).
Remove from oven and poke holes in cake top. Set aside.

For the TOPPING, place in small sauce pan:
2 Tbsp butter
2 Tbsp cream or milk
½ cup brown sugar
Heat to boil then pour over hot cake. Serve warm.
Optional: Top with whipped cream (although we never do anymore as the sauce is sweet enough for us).
