I've heard these thin mint GS cookies are good curshed in homemade vanilla ice cream.

I also make these!

I use the Andes mint chocolate chips, though, and don't add any extra flavoring.

They're so good straight from the freezer!

Could you dip the whole cracker and put on wax paper to let the chocolate set?

Yes, let the excess drainoff so you don't get a puddle of choc. around it. Oreos are also good dipped in chocolate. My favorite is mint oreos dipped in white choc. Yum!

Oh, Karen, those sound so yummy!!! My DH's Aunt Jeri used to put peanutbutter between two Ritz crackers and then dip them in chocolate, then let them set. They were great! She sent them every year in our "Christmas Boxes". Thanks for the memory!
