Grease 9x13 pan. Preheat oven 350-degrees

Crust & Topping:
2 cups flour
1-1/2 cups coconut
1/4 teaspoon salt
1/2 cup walnuts, chopped
1 cup sugar
1 cup butter or margarine, melted (2 sticks)
Mix all ingredients together. Press half of the mixture into pan - set remaining mix aside

Filling:
1 large can of crushed pineapple
1/2 cup sugar
2 tablespoons corn starch
1/4 teaspoon salt

Put all filling ingredients into pan and bring to a boil, reduce heat and then simmer 4 minutes

Remove from heat, and add: 1 tablespoon butter, 1 tablespoon lemon juice (optional). Pour over crust mixture, spreading evenly. Sprinkle remaining crust mixture over top.

Bake 30 minutes or until golden brown.

Enjoy!

Sounds like something I should get up from here and make. Espically since there are no calories today.
