For me personally, I'd never handquuilt a log cabin because of all the seams.
But a traditional/older way way to quilt Log cabins was with the Baptist Fan pattern.
Here's a graphic of that design.

I love the Baptist Fan quilting pattern on log cabin quilts, but doubt I would ever do one because of all the seams. For hand quilting, I would probably opt to (1) quilt a line down the middle of each log, or (2) quilt a spiral from the center outward, again quilting through the center of the logs. This minimizes the number of seams that are crossed.

When I hand quilted one a couple of years ago, I used various sized stars sprinkled throughout the quilt. I did a star layout of the blocks as well so it was consistent with the layout. Not that it really mattered but it was a graduation quilt for a friend's son and I wanted him to know he was a 'star'. Hence the star theme throughout.

I have seem them quilted with the stitching down the center of the logs. It was beautiful, and looked like even more logs. I loved the way it looked!!

An Amish hand-quilted a large one for me in the ditch. I really loved how it turned out. It wasn't the traditional log cabin setting so wanted the design to really be stressed.

My priority hand quilting is to avoid the seams. I just don't get satisfactory stitching crossing seams, either stabbing or backstitching. Quilting through the middle of logs sounds like a good possibility, or for less work, SID at a regular interval as required by your batting (not necessarily every log).

I just finished my 3ed log cabin with my hand dyed fabrics, I hand quilted each one with a stitch in the ditch, going on the inside of each seam, as all the seams are pressed to the out side of the blocks. one was all 6" blocks. the other two had both 6" and 12" blocks. I stitch on each seam. This works for me.

I started in the ctr of my logs and quilted the center in a spiral of each log.
