    Default best noodleless lasgane ever!

    went to a retreat and had sweet potato lasagne she zucuuni but i put brussel sprouts it was delicous made it for hubby when i got home
    taking it to pot luck next week
    made my own version
    ground beef
    mozzarella sliced cheese sweet potato and tomato sauce

    Being married to a Sicilian, we don't mess with the sauce recipes or the lasagna.
    I made a veggie lasagna once while it was delicious, we never had it again...lol

    I make a no noodle lasagna as well. Make it as you normally would, but substitute thin slices of eggplant, zucchini, yellow squash for the noodles.

    I Like my noodles, but I do sub half of them with eggplant and/or zucchini and add a layer of chopped spinach for a healthier version. Never thought of adding brussel sprouts...I do love those.

    Not being Sicilian, I can say vegetable lasagna is the bomb digety best. Nom nom nom......
