A cake with beans in it

Go ahead and try them. If you mash up the beans, you'll never know they're in there.
My family used to take part in a local "pinto bean cookoff" and we tried all kinds of recipes. I won a few awards with pinto bean cake, pinto bean pie, and even pinto bean fudge.
I love trying recipes with unusual ingredients........such as beet cake or spaghetti squash pie. It's a lot of fun, and the results will often surprise you.
