    Do you make Italian Sausage? If so, what seasonings do you use? Thanks.

    I don't make Italian sausage, but I love all the spices you listed. I would probably add basil and possibly finely minced sundried tomatoes.

    I jut use Penzey's Italian sausage mix. I can't think of all the ingredients but it does have fennel which is "required" for italian sausage IMO. I mix it with ground turkey to make italian sausage.

    I make mine vegan by using my seitan burger recipe. They come out pretty good. I agree, basil would be nice in it.
