do you really need paper when peicing some quilts?

and I really don't understand why one would have to sew to paper?

I don't really understand either! Looking at the tutorial I thought that it was to make trimming the block down easier,but then she said that her paper had shrunk...perhaps it's to make it easier to get all the strips lined up properly, as they are a bit wonky and I could see myself sewing them all together and then not having the right size at the end because I went too wonky.
Just my thoughts, hopefully someone who knows will be along soon!

I have done this using calculator paper....it makes it so easy to make many many long strips of scrap strips...and the calculator paper tears away so easily. Must do, no......but it is easy.

i agree with this. with some of the pieces being at an angle, the bias could cause the strip to go wonky.

It's more foundation piecing or strip piecing than paper piecing. You can use any kind of fabric cut in strips. Muslin is always a good choice, or if you have some "why did I buy that" fabric, use it for your foundation, or you can use a nonfusible foundation (like a lightweight Pellon). Some people use fabric softener sheets that have already been used. Press them flat with a warm iron. Jenny Doan has several tutorials about strip piecing.

English Paperpiecing is normally done by hand using hexies or small diamond or something similar (check out flower Garden Hexie Designs)
Foundation Piecing is very similar to Paper Piecing other than you use a "foundation" (muslin or light weight fabric) that will stay in the quilt and not be torn out.
Strip Piecing is done when you want to something similar to a Rail Fence Quilt for example. You sew strips of fabric together and then cut your blocks to size. A rail fence block usually uses three or four strips. Basically strip piecing can be used as a quick way to make certain blocks.
