White gravy is for breakfast meals and brown gravy is for supper meals. Chicken gravy is made with pieces of chicken skin battered, fried golden brown and crispy, chopped up and added to the brown gravy. White gravy, has crumbles of sausage or bacon mixed in. Always made in big cast iron skillet.

My husband is an over the road truck driver and while in California he ate chicken and waffles. I fixed it when he got home for the family and everyone loved it. It didn't sound good but I also know that it is big in the south. Gotta try it! :D
