Can New Englanders help me with a salmon patty sauce?

My DH lived in Conn. for several years and enjoyed eating salmon patties there with white sauce on them. Being the southern girl that I am...I have NO idea what it was. I made salmon patties the other night and fixed a creamy horseradish sauce to go with...he said...nope, not it. When I asked him if it was a dill sauce, he said he didn't think so.

So....what do you folks in New England eat on your salmon patties???

can't help you, I put ketchup or tartar sauce on mine. Although a dill sauce sounds good.

My friend makes it with the liquid from the canned salmon. Kind of like gravy. I think it's just salmon juice, milk, black pepper and flour. Sometimes she put some frozen English peas in for color.

It's a white sauce made with flour, milk, butter, salt and white pepper. We make a salmon pie and we make a white sauce to go on top of it. If you have a cook book just look up white sauce.

Oh, then its really just a bashamel sauce or classic white sauce. He was saying it was something other than that, so I'll try making that to see if thats it.

You might also add a little of the salmon to the sauce, thats what we do and I was brought up in Connecticut.

The canned salmon makes a great cold salad as well - with mayo - I like it better than tuna.
