Chewy Chocolate Cookies
I have a couple of recipes for chocolate cookie, but they all get crunchy after they cool. I'm looking for one that is chewy instead. Seems like there are tons of recipes, but none of them describe if they are chewy or crunchy. Does anyone have such a cookie recipe?

This is the recipe I've migrated to. Makes delish, soft, chewy cookies. From the Hershey's company.
1 1/4 c butter or margarine, softened (of course, I use butter)
2 c sugar
2 eggs
2 tsp vanilla
2 c unsifted flour
3/4 c Hershey's Cocoa (be generous)
1 tsp baking SODA
1/2 tsp salt
1 c finely chopped nuts (optional)
Cream butter/margarine and sugar in large mixing bowl. Add eggs and vanilla. Blend well. Combine flour, cocoa, baking soda and salt. Blend into creamed mixture. Stir in nuts, if desired.
Drop by spoonful onto ungreased cookie sheet (or seasoned baking stone - I use a dark cookie sheet). Bake at 350 degrees for 8-9 minutes. DO NOT overbake. Cookies will be soft. They will puff during baking, flatten upon cooling. Cool on cookie sheet until set - about 1 min. then remove to wire rack to cool completely. Makes about 4.5 dozen cookies (or per the recipe, about 2 dozen real-size cookies).
These really are very yummy. I also use this same recipe for plain sugar cookies by dropping the cocoa and adding 3/4 c flour. Equally as yummy.

Mix together. Bake at 350 for about 9 minutes. You need to let them cool on the pan for a couple of minutes to firm up enough to get off the pan. They will stay chewy for days when stored in a Tupperware box.
You can also add any kind of chips you want or change up the cake mix. I like peanut butter chips in the chocolate ones or cinnamon chips in spice flavored ones.

Google Chocolate Krinkles, they are soft and melt in your mouth, I like to add very finely chopped nuts to the recipe. If you can't find it pm and I'll send it to you. I have made these for over 30 years!

These are nice and soft. But DO NOT try to substitute cocoa for the chocolate.
Brownie Drops
Makes 3 dozen
2 pkg (4 oz ea) German's Sweet Chocolate (substitute 8 oz chocolate chips, but not cocoa)
1 tbsp butter
2 egg
3/4 c sugar1/4 c flour
1/4 tsp baking powder
1/4 tsp cinnamon
1/8 tsp salt
3/4 c chopped pecans
1/2 tsp vanilla
Melt chocolate and butter in double boiler, stirring occasionally, remove from heat. Meanwhile, beat eggs till foamy; add sugar 2 tbsp at a time and beat until mixture is very thick (5 min by mixer and longer by hand). Blend in chocolate mixture. Add rest of ingredients. Drop from teaspoon onto greased baking sheet. Bake 350 F 10-12 min or until set. Cool; store in tightly covered container.

Easy Chocolate Cookies.
- 1 Box Cake Mix, any flavor (I used Devlis Food) I have tried lemon which made a very good cookie.
- 1 8 ounce container Cool Whip, thawed
- 1 egg
- 1/4 cup Confectioners Sugar
- dough will be very sticky
- Combine cake mix, Cool Whip and egg in a large bowl. Stir with a wooden spoon until well combined. Batter will be sticky and thick.
- Place Confectioners sugar in a small bowl. Drop cookie batter into the sugar by the spoonful. Roll the dough around in the confectioners sugar, forming a ball.
- Bake in a preheated 350 degree oven for 10-12 minutes. Remove from oven and allow to cool on cookie sheet for 3 minutes then move to a cooling rack.
