Thread: easy crock pot meal

    I cut up half a head of cabbage and half an onion and put them in the crock pot. I added two chunks of pork loin. After that cooked for about 3 hours I added part of a bag of baby carrots. I let them cook for a couple of hours and added some new red potatoes cut in half.

    half a head of cabbage, chopped up
    half a medium onion, sliced
    a pound of pork loin, cut in two chunks
    half a pound of baby carrots
    half a pound of new potatoes
    salt and pepper to taste

    When it's 100 to 110 outside every day it's just too hot to do much cooking!!

    I put my crock pot in the garage or on the patio, depending if I am home or not....this keeps the heat out of the house. We are now on day 20 of over a 100 degrees...can't wait to see that electric bill...might have to stop eating for a while.

    I'm in Kansas too.
    Try this in the crock pot:
    1 Pork Roast in the crock pot on low for several hours with a little bit of water in the bottom.
    Add 1 can sauerkraut the last couple of hours. Fork the meat apart like pulled pork.
    Yep, too hot to cook

    My DH hates sauerkraut so I add a chopped up one or two apples and add 1-2 Tbls brown sugar. I tell him it's chopped cabbage and he eats it up and takes seconds. Men are so funny some times.

    This looks like the recipe I use for corn beef and cabbage. I use corn beef instead of pork which I do not like.

    Crockpot is the answer on these HOT days. I did a beef roast and then did baked potatoes in the microwave and broccoli cuts. Easy and didn't heat up the kitchen!! Tomorrow I will use the leftover beef and broth to make a quick vegetable soup.
