MEXI-TOSS SALAD

1 head iceberg lettuce, chopped
1/2 small head red cabbage, chopped
1 can red kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1 can diced green chilies, drained (more or less to taste)
8 oz shredded cheese (Mexican, cheddar, or jack)
Toss and serve with Ranch Dressing.

I sometimes add thawed frozen corn and black olives.

Perhaps a cabbage patch salad, and a chocolate Texas sheet cake. Maybe some Christmas Crack as an easy munchie.

I make it up ahead of time and add the avocado right before serving it. It is so yummy. For dessert go to www.annies-eats.com and make her salted chocolate caramel shortbread bars. http://www.annies-eats.com/2011/09/0...ortbread-bars/ I just took the to a luncheon and to retreat and they went nuts over them. Search for the Christmas crack. Made with saltine crackers. Very easy and yummy. I like it best made with dark brown sugar It gives it a richer taste.

Serve a Mexican chocolate cake. Use a chocolate cake recipe with the water, butter and cocoa boiled together. Add 1 teaspoon of cinnamon to the cake batter and a scant 1/4 tsp of cayenne pepper to the batter....yes, cayenne!

Also add cinnamon to the frosting. The frosting also is boiled water, cocoa and butter poured over sifted confectioner's sugar.

There are many recipes for Mexican chocolate cake or Texas sheet cake or sometimes it is misspelled as sheath cake.

Sounds like a lot of good ideas. But, mixed nuts might not be a good idea, if someone is allergic. I do not attend any retreats or classes or get-togethers because I am deathly allergic to peanuts and cashews. Yes, that means if I walk into a room that has open nuts in it I end up in using my Epi-Pen and going to emergency. Also, I have ended up in emergency because an auto clerk has had nuts then handed me my car keys.

Not meaning to scare you about taking any food, just meant to warn you about one of the scary allergies. Seafood is the other.

Have fun at the event.

Sides is what came to my mind too. It seems like many people have special dietary needs and it only gets worse as we get older. Hopefully with sides there will be something for everyone.
