    Default Easy stuffed peppers casserole.

    I made this yesterday for dinner and we liked it very much. It's easier in my opinion then stuffing the peppers. I hope you like it.

    Undone Stuffed Pepper Casserole

    Prep. time: 15 mind. Total Time: 40 min.

    l lb. lean ground beef

    2 green peppers, coarsely chopped

    3 cloves garlic, minced

    2 cups cooked long-grain white rice

    1 jar (24 oc.) pasta sauce

    1 1/2 cups shredded Italian five cheeses

    Sorry, hit the button before the recipe was finished. Heat oven to 350 F

    Brown meat with peppers and garlic in large skillet the drain.
    Return meat mixture to skillet; stir in rice, pasta sauce and 3/4 cup cheese

    Spoon into a 2-qt. casserole sprayed with cooking spray; top with remaining cheese

    Bake 25 min. or until heated through.


    I substituted instant brown rice for the white rice and turkey in place of the beef and it was delicious.

    Thanks. I'll try it. Stuffed peppers is one of DH's favorite meals. Over the years I have cut corners making it as the regular way is too much trouble. I stuff peppers splint lengthwise with frozen Angus meatballs, fill the peppers with sauce on bed of uncooked rice, add chicken stock and bake covered until rice is done.

    Sounds like a new hamburger helper. Love the "real" thing here, don't find it too much trouble to make...but lately the peppers seem to want to "talk back".

    I have a stuffed pepper soup that we like that I think has the same flavors but not as much work. :-)

    We love stuffed bell peppers and yet I have never made them. I think it's about time and I am going to start with this recipe. Thanks for sharing.

    I never take the time to stuff the peppers anymore. We always make "mock" stuffed peppers by cutting them up and mixing up all the ingredients in a 9" x12" pan. Just as good and easier.

    Same here Geri, I don't find the dish very much trouble at all to prepare. But when I make them I don't cook the ground meat as so many recipes call for. I mix raw ground beef (or ground turkey) with the cooked rice and seasonings (much like you would make meatloaf only with cooked rice instead of bread crumbs) and stuff the peppers with this. Place them in a deep casserole dish (or oven proof dutch oven) and pour the sauce all around it and over it, cover and bake for an hour, uncover and bake for an additional hour. It is pretty easy.
