Easy Dessert
2 pkg. orange jello
2 cups hot water
# 2 can crushed pineapple (drained)
# 2 can mandarin orages (drained)
Mix above and let set. Spread cool whip on top after above mixture is set. Mix 2 pkg. lemon instant pudding using 3 cups milk. Spread on top of cool whip.

lg box lime jello
cottage cheese (don't have an exact amount as I just dump in some)
1 can crushed (not the tuna size) pineapple---drained
pkg creamed cheese
Make jello according to package. Add cottage cheese and drained pineapple. Pour into 13.5 x 9.5 x2 baking dish (or the one a little bigger). Allow to set up firm. Mix a little milk with the cream cheese (makes is easier to spread) and spread on top.
You can also do this in an 8x8 or 9x9 pan using the small jello, small can of pineapple and less creamed cheese and cottage cheese.

Large box raspberry jello
1 can crushed pineapple
2 cups frozen mixed berries (blackberries, blueberries, strawberries) (not thawed)
Mix the jello with 2 cups hot water to disolve. Add frozen berries and undrained crushed pineapple. Refridgerate to set.
1 8 oz package cream cheese
1 cup sour cream
1/4 cup powdered sugar
1 tsp vanilla
Blend ingredients until smooth, spread on jello/fruit mixture. Chill to set.

I would like to share my Cranberry jello salad, that I make for our annual Thanksgiving Church Fellowship dinner. It does require some cooking, but we think it is delicious.
Cranberry Salad (serves 20-25)
2 pkgs. washed and cleaned fresh cranberries.
4 cups of sugar
2 cups of water
2 pkgs. Lemon jello (small pkgs.)
2 tlbs. regular gelatin (use two envelopes from the box)
2 tlbs. water
2 cups chopped pecans
2 cups chopped celery]
2 cups chopped apple
20 large marshmallows
1 LARGE 9/15 pyrex dish
Chop apples, nuts and celery and put aside. In a LARGE pan or pot, cook the cranberries and sugar together in the 2 cups of water. Cook until the cranberries stop popping. Remove from heat. Dissolve jello and gelatin in the 2 tlbs of water and add immediately to the cranberry mixture and stir well. While mixture is still hot, add marshmallows and stir until marshmallows are disolved. Allow mixture to cool, (pan should not be hot), then stir in nuts, apple and celery. Pour mixture into pyrex dish and place in refrigerator to gel for several hours. I like to allow it to gel for at least 24 hours. Enjoy.
Here is a quick jello salad
This serves a family of four well.
1-small pkg. lime, or any chosen flavor, appricot is great with this too.
1-small carton of small curd cottage cheese
1-small can crushed pineapple (WELL drained)
1 cup finely chopped pecans
1-small carton of cool whip
In a large bowl mix dry jello and pineapple, add cottage cheese, pecans and stir in cool whip. Refrigerate for at least 1/2 hour before serving, it is better chilled.
To serve a large group or family, instead of small portions of each, ingredient, use a large portion, except for the pecans.

1 pkg strawberry jello
2 c. hot water
Mix well and set in fridge. You can substitute ice cubes for some of the water if you want it to set up quicker.
When the jello is half set - still watery and loose but not totally liquid - add strawberries amt is up to you.
Then add 1 carton of cool whip and mix thoroughly.
I like to add small marshmallows and nuts to the mix. Amts are up to you. Depends on how well you like the optional ingredients.
Set jello back in fridge and let it set completely before serving.

Holiday Salad (from my Grandma Adah)
This is an old recipe that appeared in the Chicago Tribune in the 1950’s, sent in by a reader named Laura Eager. She called it “Molded Cheese Salad”. It’s very unusual, not particularly sweet---and was my Grandma's and my very favorite special salad.
Lemon gelatin, 2 packages or one large
Water, boiling, 3 cups
Cottage cheese, ˝ pound (1 cup)
Pineapple, canned, crushed, about 9 ounces, with juice
Olives, green, pimento stuffed, sliced, 1 cup
Cream, whipping, 1 cup before whipping
Dissolve gelatin in water.
Place over ice water and chill until slightly thickened.
Fold in cheese, pineapple and olives.
Chill again until very thick.
Whip cream and fold into mixture.
Place in bowl or mold until firm.
The original recipes called for drained, sliced maraschino cherries (1 cup) but we didn't always use these.
I crave this recipe at times and make myself a mini approximation of it. I combine cottage cheese, a lunch pack size can of pineapple tidbits, some fresh lemon juice, a few sliced olives and sometimes a small amount of sour cream. Oh so good!

This is my Grandmother's Coca Cola Salad that she made every Christmas when I was a child. She was born in 1899 and passed in 1997.
