    Cool Lime Jello Salad

    I know there are several variations on this salad and this is the one our family uses:

    1 lg. package lime jello
    1 small carton cottage cheese
    1 cup mayonaise
    1 can evaporated milk
    1 sm. can crushed pineapple
    1-1/2 cups boiling water
    1/2 cup chopped walnuts

    Dissolve jello in boiling water, stirring until completely combined. Set aside. In a med. sized bowl mix the mayo, cottage cheese, evaporated milk and pineapple. Mix well, add walnuts and then combine all with jello and mix well. Pour into 9x13 glass dish and chill in fridge until well set. To serve, place a lettuce leaf on a small plate, place a square cut piece of jello on top.

    I actually liked the one that was always around when I was a kid .. Don't know who made it or the recipe but it had shredded carrots and pineapple in it. That's all I remember. :-)

    I bet it was made with orange jello. My Mom used to make it.

    i used to make this for my family it was a favorite

    The evaporated milk is just one regular sized can...Carnation or Pet or store brand.
