This is our favorite salsa. My kids love it, hubby, too. It's always a big hit at potlucks:
Salsa
Ingredients:
14 1/2 ounces can tomatoes and green chiles (like Ro-Tel)
14 1/2 ounces can whole peeled tomatoes plus the juice
1 tablespoon jalapenos (canned, diced, not pickled)
PLUS 1 teaspoon jalapenos (canned, diced, not pickled)
1/4 cup diced onion
3/4 teaspoon garlic salt, to taste
1/2 teaspoon cumin, or more to taste
1/4 teaspoon sugar, to taste

Directions:
Place jalapenos and onions in processor; process for just a few seconds. Add both cans of tomatoes, salt, sugar and cumin.*
Process all ingredients until well blended, but do not puree. Place in covered container and chill. A couple of hours of chilling will help the flavors to develop.*
Serve with your favorite thin corn tortilla chips.
You must add Fresh Celentro.....chopped up..adds flavor.
This came from one of our old established restrauants from years back. The last of the original owners has passed and we were fortunate to get a copy of this recipe. I made lots of it this year when the veggies were coming in from our garden.
MEXICO CHIQUITO SALSA
2 cans diced peeled tomatoes (or 1 large can)
1/2 small bell pepper
3 chopped jalepeno peppers (optional) (I used one and it gave it a good spice)
1 Tbsp fresh cilantro
1 Tbsp vinegar
2 tsp garlic salt
Blend together in blender. (I would blend the other ingredients and then add the tomatoes; otherwise it can become too soupy. Put in refrigerator and let cool.
