Mixed Bean Salad

2 or 3 cans of beans, your choice.I use great northern, kidney & garbanzo or black beans.
Rinse very well in colander...very important to rinse & drain the beans.
Fine dice any vegetable that doesn't get mushy.I like red,green & yellow peppers,celery & onions as a base.
Mix with beans & add dressing.
2 Tbl olive oil
!/4 C flavored rice vinegar
S&P
Fresh garlic or garlic powder. & a shake or 2 of Italian seasoning.Stir well,adding a bit more vinegar if needed.You don't want it soggy with dressing.
Refrigerate in covered container.Stir a few times & serve the next day.
We like it as is,usually adding a bit of freshly grated parmesan.Also good added to a lettuce salad, or to pasta.Keeps for a long long time.

I always add some drained canned corn for color but also because beans and corn combine to make a very nutritious dish. With the addition of the cheese that you mentioned it would make a complete protein! Ann in TN

It took me a while to get DH to eat beans as salad. Won't push my luck with corn.His reply would be Please heat the corn :)

I make veggie soup with beans, veggies & barley.
Mine is based on beef broth.

Actually, any grain added to the salad as you make it completes the protein chain. It could be quinoa, cooked wheat berries, rice, etc. Doesn't have to be corn. Ann in TN

It is the combination of beans, grains, and a milk product that create the complete protein chain. So refried beans in a flour tortilla with cheese on it, or rice, beans, and cheese, is just as complete a protein as if you were to eat a meat based meal. DH and I aren't vegetarian but we have cut our meat consumption way back and don't feel like we are missing anything nutritionally. Often we will have something like mixed grains cooked with soy milk with yogurt on top for breakfast. Of course I we doctor it up with fruit, nuts, and spices.
