    I frequently bake in my roaster oven, and really enjoy it during the summer. I can put it in the garage, and keep the heat out of the house. That works great for lasagna. I would bet your electric skillet would work well too.

    In the summer, when the house gets so hot, my best friend sets her roaster outside on the patio and does all her baking outside so the house doesn't get hot. I'm trying it this summer.

    Can you safely put a glass baking dish, such as 9" X 13", in the countertop roasting oven?

    Use the crock pot. Works great.or try the roaster oven.

    I used to make a crockpot lasagna recipe which my son-in-law really liked.

    Mock Lasagna
    use a med/large crockpot, lightly greased.

    10 oz pkg lasagna noodles, broken into bite size pieces
    1# ground beef
    1/2# Italian sausage
    1 medium onion, chopped
    1 garlic clove, minced
    12 oz Mozzarella cheese, shredded
    1 12-oz carton cottage cheese
    2 6-oz cans tomato paste
    1/2 cup water. (I would use the water to rinse out the 2 little cans)
    1 tsp dried basil
    1/2 tsp black pepper
    1-1/2 TBs dried parsley flakes

    Cook noodles according to pkg directions until tender. Drain.
    Brown the ground beef, sausage and onions together in a large skillet, stirring to break up.
    Drain and stir in the noodles. Place in the crock pot.
    Add all the remaining ingred's, stirring to mix well. Salt was not mentioned so I did not add any.
    Cover and cook on Low, or High...not sure how long, this is a really old recipe.
    (High said 3 to 5 hours)

    I have thrown it out on the gas grill in the summer when I don't want to turn the oven on, have cooked a cake on there too.
