    My husband was given a bag of peaches by a friend, but neglected to bring them home from his office for about 5 days. By the time I got them they were very close to being spoiled. I salvaged what I could but didn't have enough for a full size pie. So, I peeled & thinly sliced a large gala apple I had and added that to the peaches. I added sugar, cornstarch, & cinnamon, and made a 2-crust pie. It turned out really good. It actually tasted more like apple pie, even though there was more peach in the filling than apple.

    I have to watch my sugar and was dying for some ice cream. I took two large peaches and put them in the blender with 1 tabl of brown sugar and 1 can of evaporated milk and some regular milk...filled up some yogart cups and froze them...they where delish...

    Awesome - don't ya just like 'doctoring' a recipe.

    I just made a cake that called for crushed pineapple but didn't have any. I substituted shredded zucchini (from last years crop) and added peanut butter chips. It really does take good. It calls for a butter, cream cheese and powdered sugar frosting...but I don't think it needs it for 'just around the house' eating. Now if I were taking it to a party, I would put on the frosting.
