I was just told that my department has been assigned to bring green veggies to the potluck in a couple of weeks. I am not a cook; I am a BAKER!!!!!! I want to bring something yummy and sugary....maybe the pumpkin pie cake! <SIGH> However, I must bring a green veggie. Cooked, not a salad or slaw. Help, anybody???? What does your family rave over when you make it???? It will have to be made the night before and reheated in a casserole dish OR cooked overnight in a Crock Pot. I am grateful for all recipes! :)

I'm a baker too, so I feel your pain. I don't have a recipe, but my mom used to make creamed green peas and potatoes that were thickened....really good.
Good luck finding something good to make.
Just thinking... make a big batch of spinach, and maybe they won't ask you to bring green again. :)

Green-bean casserole is always a staple at Thanksgiving dinners in hubby's family....

Something very simple and can be served at room temperature and prepared ahead of time - steam broccoli till tender. In the meantime, saute sliced garlic in olive oil.(don't let it brown - it gets bitter) Pour the oil and garlic over the broccoli, add salt/pepper to taste and that's it. My 9 yr old grandson has loved it like this since he was old enough to chew it!

I think you should be able to bring whatever you want to a potluck, makes for some VERY interesting meals..

I used to love to cook but would rather sew.

Believe it or not, the thought did occur to me! But no, it doesn't....another department is bringing breads and drinks....
