This is a strawberry ice cream treat in a delicious coconut crust. The recipe is from 1975.

    Coconut Ice Cream Pie

    - 1/4 cup butter or margarine, melted
    - 2 cups Angel Flake coconut
    - 1 quart strawberry ice cream
    - 1 container Cool Whip, thawed
    - easy Chocolate Fudge Sauce (recipe follows)

    1) Add butter to coconut, mixing lightly. Press evenly into 8-inch pie pan. Bake @300 for 20 to 30 min. or until golden. Cool.

    2) Alternate spoonfuls of ice cream and about half of the sauce in pie pan for a ripple effect. Freeze until firm. Spread whipped topping over the top and freeze again. Sprinkle with toasted coconut and serve with remaining sauce, if desired.

    EASY CHOCOLATE FUDGE SAUCE:

Combine 1 pkg. (4 oz.) German's Sweet Chocolate, 3/4 cup evaporated milk and 8 marshmallows in microwave. Cook and stir til both are melted. Remove from heat, add 1/2 tsp. vanilla and cool. Makes 1-1/2 cups.

Sorry for the glare in the picture. It was the best pic I could get. Enjoy!!!!!!!! :D 8-)
