Suz - it's a few posts up, but here it is again :P

Preheat oven to 325.

Whisk together flour, cinnamon, baking soda, salt and coconut - set aside.

Beat butter and sugar @ medium speed until light and fluffy.

Add syrup and mix to combined.

Add egg and vanilla and beat until well combined.

Add flour in two batches and mix until just combined.

Stir in oats and raisins.

Shape 1 - 2 TBSP of dough into balls and place 2 inches apart on sheet.

Bake 15 to 20 minutes - cool for 2 minutes before transferring to wire.

**Makes 2 dozen and stores for about 4 days at room temp.

These are by far the BEST oatmeal cookie I have ever made, and I have made a lot.
