I make it the way my grandma did and this is what I do
Put water and rice in a pan hmm about 4 cups water 2 cups rice large pan, add 1/4 c raisins more if you like them cook for about 15 min to 20 min. add 1 cup sugar and 1 can condensed milk simmer for another 15 min add 1 more can of milk(like pet milk, not sweetened) and simmer about 5 or 10 min sprinkle with cinnamon and cool slightly we like it warm. If you want it sweeter add another 1/2 cup sugar.

I have a kind of basic recipe that I use.
I use 3 cups milk, 3/4 cup rice, 1/3 to 1/2 cup sugar, 1 tsp vanilla, 2 eggs beaten, handful of raisins for dried apples. Mix all ingredients and put into a heavily buttered casserole. Cover and bake about 45 minutes. I usually stir a couple of times during the baking process.

4. The thin peel of an orange
5. one cinnamon stick
1 egg
1 cup heavy cream
1-1/2 teaspoon vanilla
optional: 1 cup golden raisins
In a heavy bottom 5 qt dutch oven place the first 5 ingredients
bring to a boil then cover and reduce heat to a gentle rolling simmer. keep the lid vented slightly. cook until the rice is thoroughly cooked- anywhere between 35 -50 minutes
remove the orange peels and cinnamon stick.
beat together the one egg and the one cup of heavy cream--add immediately to the hot cooked rice mixture --stir well but don't beat it so the rice turns to mush. add the vanilla at this point as well as the golden raisins.
It will thicken as it cools
Enjoy!
This will keep for a week in a fridge.

This recipe is actually from a book that Dom Delouise wrote about 20 yrs ago. I just added the raisins to it. Have to give credit where credit is due. Anne
